NC Co-Op shows off healthy eating at Columbus Farmers Market

COLUMBUS—Every Saturday morning in the summer from 8 a.m. to noon, the Columbus Farmers Market comes alive at 40 Courthouse Square, drawing residents eager to explore the local offerings.
This past weekend, the North Carolina Cooperative Extension was on hand with a table represented by Lindsey Edwards, the Extension Agent for Family and Consumer Sciences, who showcased a delectable skillet zucchini recipe with a balsamic reduction.
“This is a Mediterranean recipe for zucchini, which is something a lot of people eat a lot of in the summer,” Edwards explained. “This is a healthier recipe where they don’t have to fry it.”

In addition to sharing the delicious recipe, Edwards promoted several upcoming classes at the Cooperative Extension located at 79 Carmel Lane, including a Mindful Mending sewing class scheduled for July 11, with a nominal $5 class fee.
She also shared the mission of the Polk County, NC Cooperative Extension, which provides a comprehensive range of research-based educational programs and resources tailored to residents of Polk County. These programs encompass various topics, including agriculture, family and consumer sciences, and youth development through the 4-H program.
The Family and Consumer Sciences programs focus on health, nutrition, and consumer-related education to enhance the lives of residents. Throughout the year, they host a wide range of workshops and events, including topics such as equine first aid and grazing management.
The Extension also offers educational resources, providing online materials and information about gardening, local events, and numerous other topics of interest. The mission of the Cooperative Extension is to empower residents by providing them with research-based information that can help solve problems and enhance their lives.
For those who can’t make it to Columbus, the Saluda Tailgate Market takes place every Friday from 4 to 6 p.m. at the Saluda Elementary School Field.
